We offer a selection of premium sturgeon caviar, including Beluga, Osetra, Kaluga, Sevruga, Siberian Sturgeon, White Sturgeon, and other seasonal varieties. We also carry non-sturgeon roe, including salmon roe and trout roe, depending on availability.
Roe is the general term for fish eggs. Traditional caviar refers specifically to salt-cured roe from sturgeon. Products such as salmon roe and trout roe are often enjoyed in a similar way to caviar, but true traditional caviar comes from sturgeon.
Sturgeon caviar is the traditional luxury caviar, known for its refined character and premium status. Salmon roe has larger, vibrant orange pearls with a juicy pop and a more pronounced ocean flavour. Trout roe is generally smaller and milder than salmon roe, making it a colourful and versatile choice for canapés, brunch, sushi, and garnishing.
We source our caviar from reputable producers and certified sturgeon farms known for quality, proper handling, and responsible production. Our available selections may vary depending on season, species, harvest, and import schedule.

Shipping & Delivery
We ship anywhere in Canada that is serviced by FedEx or Purolator. Delivery availability, timing, and shipping options may vary depending on the destination, postal code, weather conditions, and courier service availability.
Caviar is packed in insulated, temperature-controlled packaging with frozen gel packs to help maintain proper cold conditions during transit. Our packaging is designed to protect the product and preserve freshness during delivery.
Shipping methods and costs vary depending on your location, order size, delivery speed, and the type of products ordered. Available shipping options and rates will be displayed at checkout before payment is completed.
Estimated delivery times vary based on your location and the shipping method selected at checkout.
- For most areas within the Greater Toronto Area (GTA), delivery is completed next business day (Monday to Friday). If your order is placed before 11 AM EST and you request same-day delivery, we can usually accommodate this.
- For all destinations outside of the GTA, including other provinces across Canada, deliveries are typically completed within 1-2 business days.
You will receive a tracking number via email once your order ships, allowing you to monitor its progress.
To protect product quality, we generally avoid shipping perishable orders when there is a risk that the package may sit in transit over the weekend. Friday shipping may be limited depending on the destination and courier service availability.
For perishable goods like caviar, it is highly recommended that someone is available to receive the package upon delivery. This ensures the caviar is promptly refrigerated and maintains its quality. If no one is available, carriers may leave the package at your door at your own risk. We are not responsible for spoilage due to delayed receipt or improper storage after delivery.
We take utmost care in packaging and shipping. However, if your order arrives damaged or spoiled, please contact our customer service team within [e.g., 24 hours] of receipt. We will require photographic evidence of the damage/spoilage. We will then assess the situation and arrange for a replacement or refund as per our Return Policy.

Please contact us immediately if you notice an error in your shipping address. Address changes may only be possible before the order has been packed or shipped. Once the order has been handed to the courier, we may not be able to redirect the package.
Open the package as soon as possible, remove the caviar from the insulated packaging, and place it in the refrigerator immediately. Keep the product refrigerated until ready to serve.

Storage & Serving Caviar
Unopened sturgeon caviar should be stored in the coldest part of your refrigerator, ideally between -2°C to 0°C (28°F to 32°F). Under these optimal conditions, sturgeon caviar typically has a shelf life of 6-8 weeks. Inside a standard home refrigerator, where temperatures can fluctuate, it can be safely kept for about 4 weeks from the date of purchase. Always refer to the "Best Before" date on your tin.
The best place to store caviar is in the coldest area of your refrigerator, usually near the back of the lower shelf. Avoid storing caviar in the refrigerator door, as the temperature may fluctuate when the door is opened.
Shelf life varies depending on the type of caviar, packaging, and whether the product is fresh, pasteurized, or frozen. Always refer to the best-before date and storage instructions on the product label. Once received, caviar should be refrigerated promptly.
Once opened, all caviar should be consumed within 2-3 days to enjoy its optimal flavor and texture. Ensure the tin is tightly re-sealed and returned to the coldest part of your refrigerator.
After opening, gently press the lid or covering back over the tin and keep it refrigerated. If the original lid does not reseal tightly, cover the tin securely with plastic wrap before placing it back in the refrigerator. Avoid transferring caviar into a metal container.
Caviar is best served chilled, preferably over a bed of ice. Use a mother-of-pearl spoon, bone, or plastic spoon, as metal can alter the delicate flavor of the caviar. Traditional accompaniments include blinis, unsalted crackers, crème fraîche, and chopped chives. However, the purest way to enjoy fine caviar is directly from the spoon, allowing its nuanced flavors to shine.
Generally, we advise against freezing sturgeon caviar because the freezing and thawing process will deteriorate the delicate membranes of the eggs, leading to a softer, mushier texture and a noticeable decline in quality and flavor.
However, if you need to store sturgeon caviar for periods longer than 4 weeks, freezing becomes an option. Be aware that you should expect some deterioration and softness in texture once thawed. To minimize this, ensure the caviar is in its original, unopened vacuum-sealed tin and wrap it tightly in a freezer-safe bag before freezing. Thaw slowly in the refrigerator for 24-48 hours before serving.
Non-sturgeon roes, such as salmon, trout, and whitefish roe, can be frozen much more easily. Their membranes are considerably tougher and more resilient, allowing them to withstand the freezing and thawing process with minimal impact on their texture and quality. This makes them a great option for longer-term storage in your freezer.
A mother-of-pearl spoon is traditionally recommended because it does not interfere with the delicate flavour of caviar. Bone, horn, glass, or food-safe non-metal utensils may also be used.
Some metal utensils, especially silver, may affect the taste of caviar. To preserve the natural flavour, we recommend using a mother-of-pearl spoon or another non-reactive utensil.
