Paddlefish Caviar is harvested from the American Paddlefish which is a cousin to the Sturgeon and resembles the Sevruga Caviar of the Caspian Sea, although the size of the roe can be slightly smaller. Paddlefish have a very long lifespan of up to 50 years and can weigh up to a massive 100 pounds. Harvested from the Missouri, Mississippi and Tennessee rivers, this roe can range in colour from dark gray to black. The flavour is earthier, yet still buttery and mild, with a softer texture in the eggs. Paddlefish Caviar offers the consumer genuine caviar at an affordable price – less than half the price of the equivalent imported grade.
